I've seen the Italian Crockpot Chicken that everyone is pinning 100 times on Pinterest. I think I've probably even pinned it several times on my own board, but Angel doesn't eat well when I make a chicken type dinner that doesn't include pasta of some kind. So I created my own version and I must say, she cleaned her plate and my 6 years old said it was awesome.
What you need:
2 cups pasta of choice, I used rotini
1 (or 2) chicken breasts, cut into bite size pieces
1 can cream of chicken soup
1/2 can of milk
1 packet of italian dressing mix
1 TBS garlic
1 can diced tomatoes (I used the garlic basil), drained
1 can sliced olives
Prepare the pasta as package directs
Cut up the chicken, set aside
In your large skillet whisk the can of soup and milk together with the dressing mix and garlic. When it is well mixed add the chicken, keeping it on a low heat cover and let it be until the chicken is cooked. Don't let it sit too long on too high heat, or the milk will scorch
Drain the tomatoes and olives, add to the skillet, mix it in well.
Drain/rinse the pasta, add to skillet and mix everything until it is well coated.
This dinner took me about 20 minutes to make and it was a hit. It will be added to the meal plan rotation!
