July 31st

Welcome to the last day of July, which is also Mutt's Day.

A mutt is a dog who is  a mixture of breeds. Some of the best dogs in the world are mutts. When I was growing up my parents took in so many animals that needed some TLC. we would get them fixed up and healthy and then find them a new loving home.

The first dog that was all mine was Dexter. He was a mutt. The family had a golden retriever named Abby. Abby had a boyfriend across the field...Rocky.  Well Rocky was a black mutt with tan face markings and feet. When Abby had her litter she had 9 little puppies, all golden and beautiful and one completely black. He was solid black with brown eyes and I loved him . I named him Dexter.  At 8 weeks mom sent the puppies to the pet shop and a week later she stopped in to check on them. The only one left was Dexter. All alone. She brought him home. And from that day on he was my dog. When I went to college and had a place of my own, Dexter came with me. He was the best dog, and I do miss him. 

So if you own a Mutt. Give him some extra treats and play time today, it is his day!

July 30th

I didn't forget todays holiday! I promise I didn't. I was so crazy this morning getting ready for church and then having a fabulous afternoon with family that I just didn't get a chance to sit at my computer until now. But today is a very special holiday indeed! It is National Dance Day!

I was a dancer for 6 years, for the school dance teams in both Jr High and High School. There is a very very special place in my heart for dance and I so love to watch my god-daughters dance in their recital twice a year.

If you are a dancer, keep going on and on and on. Never quit. If you don't dance...start.

Happy Take Your Pants For a Walk Day.  I think that means....get your bum outside and take a walk!

I love to go for walks in the summer morning...the problem is, I don't wake up early enough to go for a walk before my day begins.  But on those rare occasions that I wake up early and take my sweet dog for a walk, I always enjoy it.

It isn't morning anymore, but take those pants for a walk and enjoy the outdoors today. (I would say shopping counts!)

Today is another important day..It is my mommy's birthday!  I my mom and I are very close, and I am so excited to give her the gift my brother and I worked on together...I prepared a blog post about it, but I can not post that until after she gets her tomorrow you will all get to see it.

One Red Tomato!

My poor little garden isn't doing so good. I planted way too late and our weather has been so crazy this year that nothing is growing. :(  I have a small eggplan trying to grow and mature, I've been keeping a good eye on it...and I have a cherry tomato growing in a pot on my front porch.

For weeks there have been tons of green tomatos hanging on there...but not doing anything. Then I came home from shopping yesterday and there it was:

And one more trying to change too!

There is hope yet!

July 26th

Good Morning all! I am a little late posting this morning, I snuggled in bed a little longer and read another chaper of The Other Boelyn husband picked up the book for me a while ago and I just started reading it.  Pretty good so far!

So we have two holidays today!  I love it!

First is All Or Nothing Day. This day makes me think of my Etsy career. When I decided to open my shop in January of 2010, I decide that if I was going to do it, then I was going to do it right; all or nothing.  And I have to say that it has worked for me!

Second holiday today is Aunt and Uncle Day. I have many Aunts and Uncles  and I love them all. I am fortunate to be able to see them often and enjoy my family.  I myself am an Aunt to Michael and Tiffani through my husband and informally to my best friends children Clayton and Maggie (I am their Aunt Nichole and she is my kids' Aunt Kristin.)

It's pretty awesome holiday day today!  I am excited about both things we are celebrating!

The first is Culinarians Day. That means more food!  I LOVE to cook, I love to bake more but cooking is so much fun and relaxing for me. I just love it!  Maybe I'll plan something special for dinner tonight to celebrate!

July 23rd

hello friends!  It is another treat filled holiday with two special treats being celebrated today!

the first is National Hot Dog Day!  I have spent a lot of time at the baseball field supporting my brother from t-ball all the way through high school, so I have eaten a hot dog or too.  I love me a good hot dog, but usually get heartburn later....but still I can't see a ball game without enjoying a nice hot dog.

To cool the heartburn from those hotdogs, dish up some ice cream for Vanilla Ice Cream Day!  MMMMM.  I love vanilla bean ice cream with a little caramel sauce, a little chocolate sauce and some whipped cream on top.....YUM!

July 22nd

Today has 2 special holidays to celebrate!  Yea for 2 holiday days!

the first is Hammock Day. I don't own a hammock and I've only been in one twice ever..they sure are comfortable and relaxing but is getting in and out of those things worth it?!?!  Maybe I just need more practice...

the second holiday today is Rat Catchers Day. Well that doesn't sound very appealing, but it is actually a holiday for the Pied Piper. You remember the story right?  Well in June of 1284 the Pied Piper rid the town of Hamelin, Germany of rats. When the mayor refused to pay him the Pied Piper returned several weeks later (July 22nd) and lured the towns children away to a cave. Some stories say that he kept the children until he was paid, other versions say the children where never seen again!  That is a little more Grimm than the stories we know right!

Is it just me or has this month been full of tributes to sweets and treats?  Of course it is because I still have 8 pounds to lose!  Well today sums it all up with National Junk Food Day. I am not a huge junk food person and thankfully my kids love to have a snack of carrots or yogurt.  But maybe today we might break out a bag of cheetos with lunch.

Happy National Raspberry Cake Day!  Raspberry season is coming to an end very soon, so get out there and make the most of it!

I loooovvveee raspberries. I grew up eating them right off the bush in my great grandmother's backyard. I was lucky enough to snag 2 hallucks from a friend last week and I didn't share any of them!  I love them so much!  I think I might have to enjoy some raspberries in some form today!

Orange Cream Cupcakes

Another recipe we tested as a possible wedding reception cupcake was the Orange Cream Pop Cupcakes from Better Homes and Gardens. These were very interesting to make and went over huge at the potluck we took them too.  I had never used gelatin in cupcakes before, but I was very happy with the final result!

Oven 350
Makes 24 cupcakes
For Cupcakes
¾ cup butter, room temperature
3 eggs, room temperature
2 ½ cups flour
2 ½ tsp baking powder
½ tsp salt
1 ¾ cup sugar
1 ½ tsp vanilla
1 ¼ cup milk
1 pkg orange gelatin
1 ¼ cup orange juice
1. stir together flour, baking powder and salt, set aside
2. beat butter for 30 seconds on medium
3. add sugar gradually, beat until fluffy, add gelatin
4. add eggs one at a time
     add vanilla
5. Alternate flour mixture and milk/orange juice mixture
6. Bake 18-22 minutes
the batter was very thin, so i actually added one more cup of flour before putting it in the cups

They didn't raise very much, so next time I will fill the cups nearly full to get the nice domed shape on top

They peeled perfectly. They didn't tear apart at all and there was very little cake stuck to the wrapper

When I cut them in half I was suprised to find how dense they were. They were super moist and had a great orange flavor from the gelatin. Next time I will let them bake for a touch longer, but they turned out great and everyone at the potluck loved them!

For Cream Cheese Frosting
1 8 ounce package of cream cheese, room temperature
½ cup butter
2 tsp vanilla
5 ½ cups powdered sugar
Beat butter, cream cheese and vanilla
I added a little bit of the left over orange gelatin to create an orange cream cheese kids have gone crazy for it!
Gradually add powdered sugar until desired consistency is reached

July 18th

Hello Friends! I am not ready for it to be monday..I spent the whole weekend at the sewing machine and just need a little more time!

Oh well, time keeps moving and I just gotta keep up. So lets celebrate National Caviar Day.  ....or not. I have never tasted caviar, and really I don't have a desire to. But for those of you who have and like it...have a little today.

The Simplicity of a Summer Day

This is exactly why I like to keep my camera in my pocket all day long.  It's always when I am doing the most mundane things that my kids bring a little excitement into my day. We didn't plan time to run in the sprinkler, but the second they heard the water turn on they came barrelling out the door and right into that water. 

I had my camera right there by the door and got some of my best shots so far this summer. Angel is a hard one to capture perfect moments of. If she notices the camera she might start posing or hiding. So the days I get these natural shots....I just cherish

I love watching them run through the sprinkler. The squeaks and screams of excitement are the most precious sounds in the world. The smiles and their faces and "mom watch this" are the things childhood is made of.  Years down the road, I will miss these summer days.

Orange Velvet Cupcakes

In the test kitchen!  For the wedding cupcakes, we decided to use a red velvet cake as one of the five flavors, because it is a favorite among most people. But to have a little fun we used orange food coloring instead of red, because the wedding colors are blue and orange.  We used the better homes and gardens red velvet recipe.
Oven 350  ..  Makes 25

For Cupcakes
¾ cup butter, room temperature
3 eggs, room temperature
3 cups flour
1 Tablespoon unsweetened cocoa powder
¾ tsp salt
2 ¼ cup sugar
1 1-ounce bottle orange food coloring (2 Tablespoons)
2 Tablespoons raspberry liqueur or milk
1 tsp vanilla
1 ½ cup buttermilk
1 ½ tsp baking soda
1 ½ tsp vinegar

1. combine flour, cocoa powder and salt, set aside.

2. In a very large mixing bowl, beat butter on medium speed for 30 seconds.

3. Gradually add sugar, about ¼ cup at a time, beating on medium speed until combined. Scrape sides of the bowl; beat on medium speed about 2 minutes more or until light and fluffy.

4. Add eggs, one at a time.

5. beat in food coloring, liqueur and vanilla

6. Alternately add flour mixture and buttermilk to butter mixture beating on low speed after each addition just until combined.

7. In a small bowl combine baking soda and vinegar, fold into batter.

8. Bake about 20 minutes or until tops spring back when lightly touched.

Because of the baking soda and vinegar, the batter is very fluffy and they rise more than most cupcakes.  So only fill the cups half way to get the perfect domed top

I was very happy with the final cupcakes consistency. Sometimes red velvet gets too sticky and will fall apart when you peel the wrapper off, but these stood up perfectly

When I cut them in half, they stood up nicely and didn't crumble everywhere. These cupcakes passed the wedding test. They aren't too sticky or too crumbly and they taste amazing.

For Cream Cheese Frosting
Allow 1 8-ounce pkg of cream cheese to stand at room temperature for 30 minutes
Beat cream cheese, ½ cup butter, 2 tsp vanilla and 2 tablespoons raspberry liqueur or milk until light and fluffy.
Gradually beat in 6 cups powdered sugar until reached desired consistency.

The frosting is very thick. Don't frost the cupcakes until just a couple of hours before serving. I made my frosting the night before and put in the refrigerator over night...make sure your frosting has enough time to come to room temperature before hands were sure tired when I finished piping the stiff frosting!

July 17th

Hello! I didn't forget about you yesterday. There wasn't any holidays on July 16th. But there are there today to make up for it.

The first one is a very yummy one!  National Ice Cream Day! This whole month is ice cream month, but today specifically is the day!

And for the second holiday, to get into a little more detail, today is Peach Ice Cream Day. I have never had peach ice cream, maybe today is the day to try it out!

Finally we have Yellow Pig Day.
The Yellow Pig was the brainstorm of mathematicians Michael Spivak and David C. Kelly in the early 1960's. They were students at Princeton University, studying mathematics. History was made as they were listing interesting properties of the number 17 (can you imagine the interesting properties!?). During this thought wave, the yellow pig was born. Most likely, it had 17 toes, 17 teeth, 17 eyelashes, etc. The yellow pig and the number 17 have been linked ever since.

I'm a little late posting today, but there is still plenty of time to celebrate!

Lets get started with Tapioca Pudding Day! I love it! my husband isn't a fan of tapioca, but I could eat it all day! 

Believe it or not, this isn't a real dish of pudding, it is actually vegan soap!

And today is also Cow Appreciation Day. Without who, we would not have pudding!  Living in the NorthWest, I see lots of cows every day. They don't smell fantastic but they are kinda cute!

July 13th

I love waking up to the sound of  birds singing by my bedroom window.  Not so much the giant ugly crow that has now taken over my yard and scared all those little birdies away.  Maybe I need to build a scarecrow ...

Anyway, lets get to todays holidays. Three actually.

The first one is Barber Shop Music Appreciation Day. This day was created in 2005 by Sweet Adelines International. It was started to mark the 60th anniversary of the founding of their organization. This organization boasts over 300 choruses, and 15,000 singers.

July 12th

Good Morning!

My husband is using my laptop to do a webinar for work today, so I am stuck with my old laptop that is literally falling apart and running sooooooo slow.  It sure makes me grateful for my new laptop!

Well lets get to the holidays. We have 2 again today!

first is Different Colored Eyes Day.  Hm, this one stumped me a little so I looked it up. There is an eye condition called Heterochromia. People who have this trait,  have two different colors of eyes. One eye may be brown, while the other is blue.  Famous people who have Heterochromia include David Bowie, Jane Seymour, and Christopher Walken. 

Being involved with breeding Miniature Australian Shepherds, I see dogs every day with different colored eyes....does that count?  I guess if you know someone that has Heterochromia, send them some flowers!

Next we have National Pecan Pie Day.

Raspberry Iced Tea

1 gallon of water
1 1/2 cups sugar
1/4 cup lemon juice
10 tea bags
1 bag of frozen raspberries

Bring the water and sugar to a boil

when it is rolling, remove it from heat, give the water a quick stir to make sure the sugar is well dissolved, add the lemon juice, tea bags and raspberries. Cover and seep for 3-5 minutes

Strain the berries and tea bags out and pour the tea into a pitcher. Leave in the refrigerator to cool.

Serve over ice!

I like to use Lipton's Green/White Tea Fusion. It makes for a nice light flavor.  I have big plans to mix different flavors of tea with different fruits! Stay tuned!

July 11th

It is a beautiful summer morning...even though I can't stop sneezing!   Something is in bloom and it is making eveyone in this house sneeze like crazy!  But allergies or no allergies, today is two holidays and we must celebrate!

First we have Cheer Up the Lonely Day. Call up a friend or visit a family member. Whatever you need to do, set aside a little time today to cheer someone up.

Also, today is World Population Day.
"World Population Day gives us the opportunity to celebrate the successes that have been achieved in global health – around the world people are living longer, healthier, more productive lives. However, it is also imperative to reflect on the challenges that face governments, communities, and families to ensure that all people everywhere are able to lead dignified, healthy lives" - USAID Health.

The site also talks about healthy family planning and awerness.
