Chicken and Dumplings on the Cheap
What you need:
Chicken Breast, cut into bite size pieces
1 onion, diced
2 Cans of cream of soup (I had one can of mushroom and one can of chicken)
half a can of milk
1 bag of frozen vegetables, thawed
1 can (or two) of biscuits
To get started, cut the chicken into bite size pieces, also cut up any onions or mushrooms that you would like to add. Also set the can of biscuits on the counter to help the rising start, don't pop it yet!
Heat your skillet and start with the onions (and mushrooms if you choose). I used some onions from my garden.
Add the chicken pieces.
When all of the chicken is cooked remove it from the skillet, set aside and keep warm.
Turn the skillet heat down to med/low
While the skillet is coming down in heat, pop open those biscuits and set on the cookie sheet..bake according to package directions
Pour both of the cans of soup into the skillet, mix well. Add 1/2 a can milk to the skillet, mix well (you might want to use a whisk). Be sure to heat your soup mix slowly and stir consistently.
When the soup is heated thoroughly, add the chicken and onions back to the skillet, then add your bag of vegetables. Mix it all together well. Keep it on low heat until your biscuits are ready.
