Corn Tortilla Chicken Lasagna

My kids love tacos and burritos, but being toddlers they have a hard time keeping the shell together and eating it in one piece, so I turned all of our favorite ingredients into a lasagna!
What you need:
18 corn tortialls (6 inch)
3 cups of , cooked, shredded chicken
2 cans of beans(kidney, black or white)
1 can diced tomatoes
1 can sliced olives
1 jar (16 ounces) salsa
1 green pepper
1 red pepper
1 onion
1 1/2 cups shredded Montery Jack Cheese
1 1/2 cups Cheddar cheese
Sour cream for serving

 Perpare:
In a bowl, drain and mix the beans and olives
In another bowl, chop the peppers and onions
Shred and mix the cheeses
Shred the chicken
 Lay 8 tortialls across the bottom of a greased baking dish.
Layer one thrid of each: salsa, bean mix, pepper mix, chicken, cheese.
Layer 8 more tortialls and repeat until the dish is full and the ingredients are all used

 Cover the dish with tin foil and bake in a 350 degree oven for 25 minutes

Remove foil and bake for an additional 10 minutes.

Remove from oven and let stand for at least 10 minutes before cutting


Top with sour cream and serve with your favorite veggie side!


Other Options
For a vegetarian dish, omit the chicken and add a thrid can of beans
Need more servings? Use a large baking dish and add 1 cup of cooked rice to each layer. You can also add 1/2 cup a sweet corn to each layer.

*Get sneaky with the veggies!
dice 2 carrots or 1 zuccini and mix with the pepper mix.

Back to the Blog and Update on Angel

Well I have neglected my blog once again. I have been absolutely terrible at getting online for anything other than working in my Etsy shop.  Not much has changed since I last posted. I made Halloween costumes like crazy and finally got my own kids' done. Ayden is a Musketeer and Angel is a Candy Land Fairy ( pictures coming soon!)

ANGEL UPDATE
Angelinna has had several seizures over the last few months. It has been just about a year since they started so frequently. In two weeks we are headed up to Spokane to Sacred Heart Children's Hospital for an MRI on Wednesday and an EEG on Thrusday. Hopefully they will be able to detect what areas of her brain are doing the best so we can start to focus her therapies in those areas.  And we hope that the EEG will show the changes over the last year and help us decide if we want to start medicating.

Please say a special little prayer for her, I wish I could just take these seizures from her so she doesn't have to suffer from them. Pray that God will keep her in His hands and take care of her.

NEW PROJECTS!
yes, I said it, I am taking on yet another project!  I got involved in my churches outreach committee. I will be hosting a series of cooking classes for young families. Teaching the basics of meal planning, budgeting and cooking a healthy meal for the family.  I will also be sharing picky eaters solutions. No worries if you can't come to the class, all of my recipies will be posted here!

Well, I'm off to pick up a bag of candy for the trick-or-treaters and get our Halloween weekend off to a start!  Have a safe weekend everyone!
